Just wanted to share another kick ass recipe I came across that is super easy. EGG CUPCAKES!!

Whisk 6 eggs in a bowl, add whatever finely chopped veggies to the mix (peppers, onion, zucchini, spinach, squash) Add a little sea salt and black pepper. Bake at 350 for 20-25 minutes in a muffin pan greased with olive oil. Good with avacado and salsa!!
